- Revolutionary Innovation: Savor launches the world’s first animal- and plant-free butter, utilizing carbon-based fat production to replace conventional agriculture-dependent oils.
- Industry Adoption: Michelin-starred restaurants and top bakeries are among the first to incorporate Savor’s sustainable butter into their menus.
- Scalability & Market Impact: With a new 25,000-square-foot pilot facility, Savor aims for large-scale production and rapid cost parity with traditional fats, addressing supply chain instability and emissions concerns.
Savor, a trailblazing food tech company, has officially launched its agriculture-free butter, a first-of-its-kind innovation that eliminates the need for animal or plant-based fats. The commercial debut marks a major milestone in the company’s mission to create sustainable and scalable fat alternatives.
“Savor was founded to find the most sustainable way to feed humanity. Truly sustainable solutions can’t just reduce our environmental footprint, they have to be affordable, approachable, and craveable,” said Kathleen Alexander, co-founder and CEO of Savor.

The food industry faces mounting pressure to reduce its reliance on traditional fats, which contribute to deforestation, emissions, and unstable supply chains. Savor’s breakthrough technology constructs fats molecularly from carbon dioxide (CO₂), green hydrogen (GH₂), and methane (CH₄), offering a viable replacement for palm oil and other widely used fats.

“Savor is redefining food production with a scalable solution that delivers great taste while enhancing stable, domestic supply chains,” said Carmichael Roberts of Breakthrough Energy Ventures.

Market Momentum:
- Renowned chefs and pastry masters, including Kyle Connaughton (SingleThread) and Juan Contreras (Atelier Crenn), are early adopters, using Savor’s butter in high-end culinary creations.
- Multinational consumer packaged goods companies are actively engaging with Savor for ingredient innovation projects, attracted by the product’s tunable fatty acid profiles.
- The company’s self-affirmed GRAS (Generally Recognized As Safe) designation from the U.S. FDA has cleared the way for immediate market entry.
“Our expanding pipeline of partners reflects a deep industry-wide status: the food sector urgently needs solutions to mitigate supply chain instability, which continues to impact revenues and margins across the board,” said Chiara Cecchini, Vice President of Commercialization at Savor.

With a state-of-the-art production facility in Batavia, Illinois, Savor is positioned for industrial-scale manufacturing. The company’s rapid technological advancements allow it to achieve cost parity with conventional fats faster than previous sustainable alternatives.
Backed by Bill Gates’ Breakthrough Energy Ventures, Savor is well-funded to drive mass adoption of its sustainable fats. Gates emphasized the importance of cost competitiveness in his support of the company.
“The process doesn’t release any greenhouse gases, and it uses no farmland and less than a thousandth of the water that traditional agriculture does,” Gates wrote. “And most important, it tastes really good—like the real thing, because chemically it is.”

Savor plans to expand its product line beyond butter, introducing more sustainable fat solutions to the global food market.
